Abstract

Copper is an essential heavy metal group that is needed by the body in small
concentrations to help metabolic processes. However, it can be potentially toxic if the
concentration in the body is excessive. Canning is a method of preserving food and beverages
that are put in cans which are tightly closed and airtight so that spoilage substances and
organisms cannot enter. In the packaging process, products with defective packaging are
often found. Damage to cans can cause contamination or the entry of heavy metals into food
and beverages directly. Based on this, the formulation of the problem in this study is
whether Cu contamination in canned food and beverages is in accordance with BPOM No.
03725/B/SK/VII/89. This study aims to determine the suitability of the Cu content in canned
food and beverages. This type of research is descriptive. The number of samples examined
were 16 samples, consisting of 8 samples of food in the form of sardines and 8 samples of
drinks in the form of sweetened condensed milk obtained from a shop in the PuriLidahKulon
Village, Lakarsantri. Sample examination was carried out by laboratory tests at the Central
Health Laboratory (BBLK) using the Atomic Absorption Spectrophotometry (AAS) method. The
maximum limit value of copper metal contamination in canned food and beverages is 20.0
mg/Kg. From the results of the study, 16 samples of canned food and beverages all samples
were still below the maximum limit that had been set. So that canned food and drinks are
still safe for consumption.
