Abstract

Latar Belakang: Dalam beberapa dekade terakhir, sistem pangan global telah mengalami beberapa perubahan karena kemajuan dalam teknik pengolahan makanan. Konsumsi makanan ultra-olahan (UPF) tampaknya merupakan konsekuensi dari perubahan sistem pangan global yang mengarah pada pergeseran pola makan yang berbasis makanan tradisional, dimana akan mengakibatkan perubahan kebiasaan pola makan remaja di masa depan. Tren ini mengkhawatirkan karena makanan ultra proses mengandung gula, lemak, kolesterol, garam yang tinggi namun rendah serat pangan dan vitamin membawa konsekuensi terhadap kejadian perubahan status gizi seseorang. makanan olahan khususnya Ultra- Processed Food (UPF) merupakan bagian dari klasifikasi NOVA yang didapatkan mengandung nutrisi “obesogenic” yaitu padat energi, berlemak, manis dan asin yang menyebabkan peningkatan indeks massa tubuh menurut usia.
Tujuan: Penelitian ini bertujuan untuk mengetahui hubungan antara konsumsi makanan ultra-olahan (UPF) dengan status gizi pada anak usia sekolah 16-18 tahun di Sidoarjo.
Metode: Metode penelitian ini adalah observasional analitik dengan pendekatan cross sectional. Sampel penelitian adalah sekolah menengah atas swasta di Sidoarjo, Jawa Timur selama 1 bulan pada September 2024. Siswa SMA kelas 12 sebanyak 101 orang dipilih secara acak sebagai responden. Pengukuran berat badan dan tinggi badan dilakukan untuk mengetahui status gizi anak, sedangkan konsumsi UPF diperoleh dengan Food Frequency Questionnaire (FFQ). Uji Spearman dan Chi-square dilakukan untuk analisis bivariat dan regresi linier untuk analisis multivariat, data analisis menggunakan SPSS versi 26.
Hasil: Hasil penelitian didapatkan terdapat hubungan yang signifikan antara konsumsi makanan olahan ultra proses dengan status gizi pada siswa SMA Muhammadiyah 2 Sidoarjo.

Background: In recent decades, the global food system has undergone significant changes due to advances in food processing techniques. The consumption of ultra- processed foods (UPF) appears to be a consequence of the changing global food system, leading to a shift in diets based on traditional foods—which will result in changes in adolescent dietary habits in the future. The increasing consumption of ultraprocessed foods is a cause for concern due to their high levels of sugar, fat, cholesterol, and salt, while simultaneously lacking in dietary fiber and vitamins. These nutritional deficiencies can lead to significant implications in a person's nutritional status. Ultraprocessed foods (UPF), as part of the NOVA classification, have been found to contain components such as energy-dense, fatty, sweet and salty which contributes to an increase in Body Mass Index (BMI)
Objective: This study aims to determine the link between consumption of ultra- processed foods (UPF) and the nutritional status in adolescents aged 16-18 years in Sidoarjo.
Method: This research method is observational analytic with a cross-sectional approach. The research sample was a public high school in Sidoarjo, East Java, during for 1 month on September 2024. 101 high school students in grade 12 were randomly selected as respondents. Measurement of body weight and height was conducted to determine the nutritional status of adolescents, while UPF consumption was obtained using the Food Frequency Questionnaire (FFQ). Spearman's correlation coefficient and Chi-square analysis were conducted for bivariate analysis, while linear regression was utilized for multivariate analysis. The data was analyzed using IBM SPSS Statistics version 26.
Result: The results of the study showed a significant relationship between consumption of ultra-processed foods and nutritional status in students of SMA Muhammadiyah 2 Sidoarjo.
