Abstract
Perkembangan era globalisasi yang semakin maju berdampak pada persaingan usaha di bidang kuliner terutama bisnis coffee shop atau kedai kopi. Banyaknya kedai kopi yang ada, terutama di Kota Surabaya mendorong minat konsumen untuk mengonsumsi kopi. Mengonsumsi kopi yang terlalu berlebihan mengakibatkan hiperkolesterolemia, meningkatkan denyut jantung dan tekanan darah, yang dapat menjadi faktor risiko penting meningkatnya penyakit jantung coroner. Tujuan penelitian ini untuk menganalisis kadar kolesterol pada peminum kopi di daerah Surabaya. Metode pada penelitian ini menggunakan desain cross sectional yang dilakukan di kedai Kopi daerah Jojoran Kota Surabaya pada bulan November 2024 – Juli 2025 dengan teknik pengambilan purposive sampling. Sampel penelitian ini adalah 35 peminum kopi di kedai kopi daerah Jojoran, Kota Surabaya. Hasil penelitian ini menunjukkan sekitar 37,1% atau sekitar 13 responden memiliki kadar kolesterol tinggi, sedangkan 62,9% jumlah responden lainnya memiliki kadar kolesterol normal. Kesimpulan pada penelitian ini kadar kolesterol peminum kopi di daerah Jojoran, Kota Surabaya memiliki kadar kolesterol normal dengan rata-rata 180 mg/dl.

the increasingly advanced era of globalization has an impact on business competition in the culinary sector, especially the coffee shop business. The large number of coffee shops, especially in Surabaya, encourages consumer interest in consuming coffee. Excessive coffee consumption can cause hypercholesterolemia, increasing heart rate and blood pressure, which can be an important risk factor for increasing coronary heart disease. Purpose of this study was to analyze cholesterol levels in coffee drinkers in the Surabaya area. Method used in this study was a cross-sectional design conducted at the Jojoran Coffee Shop in Surabaya City in November 2024 – July 2025 using a purposive sampling technique. The sample of this study was 35 coffee drinkers in coffee shops in the Jojoran area, Surabaya City. Results of this study showed that approximately 37.1% or approximately 13 respondents had high cholesterol levels, while 62.9% of the other respondents had normal cholesterol levels. Conclusion of this study is that the cholesterol levels of coffee drinkers in the Jojoran area, Surabaya City have normal cholesterol levels with an average of 180 mg/dl.
