Abstract
Latar belakang: Sisa makanan pasien rawat inap tidak hanya mencerminkan pola konsumsi, tetapi juga dapat berdampak pada status gizi, persepsi terhadap kualitas layanan, dan efisiensi biaya rumah sakit.
Tujuan: Mengetahui pengaruh jumlah sisa makanan terhadap status gizi pasien, kualitas layanan SDM, dan efisiensi biaya di rumah sakit.
Metode: Penelitian ini dilakukan pada bulan Mei hingga Juni 2025 di tujuh kamar rawat inap yang terdiri dari kelas 3, kelas 1, dan VIP. Data yang dikumpulkan meliputi karakteristik demografi pasien, berat sisa makanan pasien, serta penilaian terhadap kualitas layanan SDM melalui kuesioner yang telah divalidasi. Analisis dilakukan secara kuantitatif untuk mengevaluasi hubungan antara jumlah sisa makanan dengan karakteristik demografi, persepsi terhadap kualitas layanan, serta efisiensi biaya berdasarkan kelas pembiayaan.
Hasil: Ditemukan bahwa usia dan jenis kelamin memengaruhi jumlah sisa makanan. Lansia cenderung memiliki sisa makanan lebih sedikit, sedangkan perempuan cenderung lebih banyak menyisakan makanan. Tiga aspek layanan yaitu pelayanan staf, porsi makanan, dan suhu makanan diketahui berpengaruh signifikan terhadap kepuasan pasien. Sisa makanan tidak selalu berkorelasi langsung dengan status gizi karena adanya konsumsi makanan dari luar. Untuk efisiensi biaya, pendekatan efficacy dapat dilakukan melalui pengelolaan limbah makanan menggunakan strategi ekonomi sirkular.
Kesimpulan: Pengurangan sisa makanan dapat dilakukan dengan peningkatan kualitas layanan makanan dan penyesuaian kebutuhan kalori pasien. Pengelolaan limbah makanan menjadi produk bernilai dapat menjadi strategi efektif rumah sakit dalam mendukung efisiensi biaya dan keberlanjutan lingkungan.

Background: Inpatient food waste not only reflects consumption patterns but also impacts patients' nutritional status, perceptions of service quality, and hospital cost efficiency.
Objective: To examine the influence of food waste on patients' nutritional status, the quality of human resource services, and cost efficiency in hospitals.
Methods: This study was conducted from May to June 2025 in seven inpatient rooms across Class 3, Class 1, and VIP wards. Data collected included patient demographic characteristics, food waste weight, and assessments of service quality through a validated questionnaire. Quantitative analysis was performed to evaluate the relationship between food waste, demographic factors, perceptions of service quality, and cost efficiency based on the financing class.
Results: Age and gender were found to influence the amount of food waste. Elderly patients tended to waste less food, while female patients left more uneaten food. Three service aspects, staff performance, food portion size, and food temperature had a significant impact on patient satisfaction. Food waste was not always directly correlated with nutritional status due to the possibility of patients consuming food from outside the hospital. For cost efficiency, an efficacy-based approach can be implemented through food waste management strategies aligned with circular economy principles.
Conclusion: Reducing food waste can be achieved by improving food service quality and adjusting portions based on patients’ caloric needs. Utilizing food waste as a value-added product presents an effective strategy for hospitals to enhance cost efficiency and promote environmental sustainability.
